The idea for Cervecería Central was born from a conversation between two neighbors in 2014. One is Joaquín, a brewer with a long career, studied in Germany on the verge of retirement, and the other, Carlos, a young man who, for reasons of life, had lived in several countries and was eager to embark on something new and innovative.
Both lovers of good beer begin to devise what the ideal brewery would be like, taking into account the few craft brewers in Panama at that time, the new trends and the personal tastes of each one.
Carlos, convinced of what he had in mind, gathers his childhood friends Iván and Mike and presents the idea to them in a brief presentation of just 5 slides from a sofa. Mark, a young entrepreneur who loves soccer and pintas con flow, joins the conversation. Finally, Luis, a true globetrotter who has started various ventures along his way.
Carlos and Joaquín start making beer from the living room of Joaquín's apartment using a 20-liter pot, a ladle, a manual mill to grind corn tortilla dough, a modified refrigerator and 2 plastic bottles of water that would serve as fermenters.
There were several tests and long days. Some beers were good and others not so much. The first beer they made was a blonde ale that would later be known as River Down Ale. It was a smooth, but full-bodied beer for all people interested in the craft movement. The second was an Indian pale ale that would later be known as the Sleeping India IPA. It was a stronger beer, with more character, intended for hop lovers. Always looking to highlight, with the arts and names, Panamanian things.
This is how Central began, with a vision to which passion and hard work were dedicated to create a dream, motivate people to undertake and toast with good beers.
Central has grown since that time and we want to thank you all for being a part of this incredible journey.
